Seasoned Wood is a wheated bourbon. This is the first wheated bourbon Buffalo Trace has released under the E.H. Taylor brand. Buffalo Trace currently makes only one wheated mashbill, but utilizes different warehouses and warehouse floors to create different variations in the flavor profiles. This is a Bottled in Bond (BiB) bourbon. To be labelled BiB, the whiskey must be the product of one distillation season and one distiller at a single distillery, aged in a federally bonded warehouse under U.S. government supervision for at least four years, and it must be bottled at exactly 100 proof. Additionally, the BiB label must clearly identify the distillery where it was distilled and where it was bottled, if different. About the brand

Founded as a small-batch bourbon distillery by Colonel Edmund Hayes Taylor in the 1800s, Colonel E. H. Taylor has been an innovator since its inception. Not only did the brand revolutionize distilling processes and techniques, being the first to use copper fermentation and inventing a steam heating system still in use today, but Taylor's meticulous and precise approach to manufacturing whiskey also made his exports some of the most distinctive, complex and flavorsome sipping whiskeys, which they remain today. Produced in limited quantities at the Buffalo Trace Distillery, Colonel E. H. Taylor has received countless awards, most recently earning the Gold Medal in 2020's San Francisco World Spirits Competition for both their Small Batch and Single Barrel Bourbon Whiskeys. Tasting Notes

Nose

new tennis balls, fresh cut wood, and golden raisin notes intermingle with macerated plum and dark cherry, and oatmeal raisin cookie. However, the overwhelming note from start to finish is honeysuckle. After opening, the honeysuckle blocks out almost every other competing scent.

Taste

immediately salty, tannic, and heavily peppered. The tannic notes are not to be outdone by the incredibly bitterness of the dram. Black pepper competes with oversteeped black tea, and wet woodchip, resulting in a blackened peppercorn-crusted steak effect. Altogether very savory, salty, tannic, and bitter.

Finish

A fair amount of oak, butterscotch, and allspice that leans heavily on the nutty side. Oak is ever present throughout, but not to the point of overburdening the palate. The bourbon’s medium weight consistency carries tannins throughout that errs more on the astringent side and less on the bitter side.
