Fidencio Jimenez started making mezcal over 120 years ago. Now owned and operated by his great-grandson, Enrique Jimenez, Fidencio Jimenez continues to embrace its dedication to the art and tradition of mescal production. Located in Santiago Matatlan, Oaxaca, which is also known as the 'Capital Mundial Del Mezcal, or the mezcal capital of the world,' the Jimenez Family have been farming agave in the 1950's taking great care to produce the highest quality plant. The entire estate is dedicated to one of Oaxaca's most celebrated agaves - the Espad?, which the family harvest entirely with biodynamic and organic methods.
Always harvested during the new moon, the family believe that this phase of has a profound influence on the flavor of mezcal. And perhaps it does, as their double distilled mezcals are famous for their exquisite taste and smoothness.
Fidencio Pechuga Mezcal is a very special spirit, produced by Oaxacan mezcaleros to celebrate the fall harvest and traditionally served at special occasions like weddings, christenings, & other village fiestas. To make Pechuga, freshly harvested fruit is dstilled and then redistilled with a chicken breast hung inside the top of the copper pot still. The effect is smoke, fruit, and savory aromas all in one glass.
